1. Prepare the chicken:
Season the chicken strips with salt and pepper.
2. Sear the chicken over high heat:
Heat oil in a pan over medium-high heat. Add the chicken strips and fry on both sides until browned and almost cooked through. Remove from the pan and set aside.
3. Prepare the glaze:
In the same pan, add soy sauce, honey, vinegar, garlic, and ginger. Bring to a simmer, stirring constantly, until the sauce thickens slightly.
4. Thicken the sauce:
Add the cornstarch mixture (cornstarch mixed with water) to the sauce and stir constantly until it thickens to a glaze-like consistency.
5. Mix and caramelize:
Return the chicken to the pan and toss it with the glaze. Continue frying for a few more minutes until the chicken is glossy and caramelized.
6. Sprinkle with dried herbs as desired and serve.
